Super quick pumpkin-soup

It's this time of the year again... It's so cold outside you need to wear layers and layers-but you're still cold.
When it comes to lunch or dinner you're craving something which warms you up. But in nowadays we're all quite busy and many people don't have time to prepare a quick and healthy lunch.
Luckily, I have a recipe for you which is quick, healthy, delicious and warming!
You need to try it, it's one of my favourite soups!

 


Pumpkin & Leek Soup
 
 
Ingredients for 2 servings:
-about half of a butternut Squash, cut into tiny pieces
-some chopped up leek
-some chopped up celery
-about 1 tsp Curry
-salt
-pepper
-Paprika, Cheyenne pepper, any spices you like
-some herbs like oregano or basil
OPTIONAL: 1 sweet potato or normal potato, tiny pieces
 
Bring about 5dl of water to a boil with a teaspoon of salt. Once it boils, add the chopped squash, leek, cellery and, if desired, the potatoes (it makes the soup creamier and it tastes delicious, too).
Let it all cook for about 5-10mins, I boil it on a high heed to be quicker.
Once the veggis are cooked (you can check that with a knife!), add the spices and purrée the soup with a hand mixer.
Taste your soup and add more spices if you need to and if it's too thick, add more water, if it's too liquid, let it boil for a bit to absorb the water.
Now you're actually already done!
 
I like to top my soup with seeds, just like pumpkin or flax seeds. Also sesame tastes great.
Enjoy with a slice of bread or a side of potatoes, like I did ;D
